Black IPA

All Grain Recipe

12 lbs 2 row pale malt

12 0z. pale wheat malt
12 oz. roasted barley
12 oz. carafa III
12 oz. Crystal 60

Mash  5 gals  60 minutes @ 154 degrees F
Sparge with another 2-2 1/2 gals to yield at least 6 gallons of a deep black wort.
(don't worry-it will be a very deep black)

Boil 60 minutes.

2 oz. Chinook @ 60 minutes
1 oz. Simcoe @ 10 minutes
1 oz. Amarillo @ 10 minutes
1 oz. Simcoe @ flame out
1 oz. Amarillo @ flame out
1 oz. Simcoe - dry 
1 oz. Amarillo - dry

I re-racked and  dry hopped about two weeks after I pitched the yeast. 

WL California V Ale yeast

( My calculated actual attenuation rate was 67%.)

I also added Irish moss @ 15 minutes
and yeast nutrient

my fermenting temp is about 68 degrees F.

OG  1.062
FG:  1.008
IBU:  142
ABV:  7.09%

an update:  After a year in the bottle, the beer has mellowed and is much more drinkable.  I thought that originally it was too hoppy.  I would change the recipe to drop the simcoe and amarillo to some more flowery hops for the dry hop.  if i try it, i will update recipe.

1 oz amarillo dry hop after 2 weeks ferment

wow, my fav... not an overly hoppy signature, just right.
