5 gal batch
10.5 lbs. Munich II 10L
4.5 lbs. German Pilsner
1 lb. Caramunich 60L
.6 oz Perle hops 60 minutes into boil (8.9 AA)
1 oz Hallertau Mittelfrue 90 minutes into boil (4 AA)
mash with 5 gals water at 155 degrees farenheit for 1 hour
sparge with 2 1/2 gal water @ 150 degrees farenheit
boil for 2 hrs
add hops at prescribed intervals
IBU: 23.72
cool and rack into carboy.
let it sit until wort temp is about 68 degrees farenheit
pitch yeast
2 packets Wyeast 2308 Munich lager yeast
ferment at 50 degrees farenheit.
increase temp up to 55% over a period of two weeks for a couple of days for a diacetyl rest
(depending upon how fermentation goes-might need to ferment longer)
after primary fermentation is done rerack into keg and lager at 34 degrees for 3-4 months
i am going to rerack into another keg and filter it with a canister filter in the process and then force carbonate

Belgian Wit and blood orange wit

6 lbs wheat liquid malt extract
(next time try 8 lbs)
1 oz Saaz hops at 60 min
3/4 oz cracked (not crushed) Coriander seed @ 7 min
1 oz bitter orange peel @ 7 min
WLP400 Belgian Wit yeast
OG: 1.046
IBU: 10.03
blood orange wit:
use recipe above and add
use potato peeler to peel 12 blood oranges to avoid the pith
boil peelings in wort for last 7 minutes (I added the 1 oz of bitter orange peel as well)
add the juice of 12 blood oranges to cooled wort, then pitch yeast and ferment.

Black IPA
All Grain Recipe
12 lbs 2 row pale malt
12 0z. pale wheat malt
12 oz. roasted barley
12 oz. carafa III
12 oz. Crystal 60
Mash 5 gals 60 minutes @ 154 degrees F
Sparge with another 2-2 1/2 gals to yield at least 6 gallons of a deep black wort.
(don't worry-it will be a very deep black)
Boil 60 minutes.
2 oz. Chinook @ 60 minutes
1 oz. Simcoe @ 10 minutes
1 oz. Amarillo @ 10 minutes
1 oz. Simcoe @ flame out
1 oz. Amarillo @ flame out
1 oz. Simcoe - dry
1 oz. Amarillo - dry
I re-racked and dry hopped about two weeks after I pitched the yeast.
WL California V Ale yeast
( My calculated actual attenuation rate was 67%.)
I also added Irish moss @ 15 minutes
and yeast nutrient
my fermenting temp is about 68 degrees F.
OG 1.062
FG: 1.008
IBU: 142
ABV: 7.09%
and also -- yum
My cost was about $60.00

an update: After a year in the bottle, the beer has mellowed and is much more drinkable. I thought that originally it was too hoppy. I would change the recipe to drop the simcoe and amarillo to some more flowery hops for the dry hop. if i try it, i will update recipe.
